Official dinner at the Royal Palace of Stockholm

On Thursday 15 March, The King hosted the second official dinner of the year.
Guests included representatives from the diplomatic corps, the Riksdag, the Government, counties and authorities, and Swedish science, culture, sport and business. The guests were welcomed by The King and Queen, Princess Madeleine and Prince Daniel in the Vita Havet Assembly Rooms. The dinner was served in Karl XI's Gallery.
 
The King escorted teacher Karin Hägglund to the table. Minister Hillevi Engström was seated to his left. The Queen was escorted to the table by Minister Göran Hägglund, and Minister Peter Norman was seated to her right. Princess Madeleine was escorted to the table by Minister Stefan Attefall. Minister Göran Hägglund was seated on her other side. Prince Daniel escorted Minister Annie Lööf to the table. Teacher Karin Hägglund was seated to his left.

Menu


The first course was creamy sea urchin soup with oysters, spider crab, green asparagus, plum tomatoes and herbs.
 
The guests were then served baked fillet of turbot with a horseradish crust, white wine butter sauce, truffle royale with toasted macadamia nuts, and pearl barley compote with fried Jerusalem artichoke.
 
This was followed by roast duck breast with four sorts of peppercorns, orange gravy, duck sausage with yellow beet ragout, potato and onion terrine, and orange chips.
 
The dinner concluded with "chocolate variation": Manjari chocolate ice cream and Satilla chocolate Bavarian cream, served with passion fruit truffle.
